Coco(nut) Cookies



Mr Simplyxstylish love of food(especially sweet) made me make beautiful wheat flour coconut cookies. I am not a great fan of processed flour so made these out of wheat flour than the regular all purpose flour(maida), some guilt free(not gluten free) indulgence with a cup of tea on a quiet summer evening.








Recipe:

A very simple - quick and delicious one

Ingredients:
Whole wheat flour -1 cup
Dark Brown sugar (can use light one too) -1/2 cup (I like less sweet, you can use 3/4 cup to add more sweetness)
Unsalted Butter -1/2 cup
Desicated dry coconut -1/2 cup
Raisins -1/4 cup
Whole Milk -1/4 cup(can vary depending on how dry the dough is)
Vanilla Extract - 1 1/2 tablespoon
Green cardamon powder -1/2 tablespoon
Baking powder -1/2 tablespoon
Baking Soda -1/4 teaspoon
Salt -1/4 teaspoon(omit if using salted butter)

Procedure:

1) Finely chop raisins.
2) Add dry ingredients- Wheat Flour, desicated coconut, chopped raisins, cardamon powder, baking powder, baking soda & salt. Mix well.
3) Preheat the oven at 350 F or 180 C
4) Now add unsalted (room temperature) butter, brown sugar, milk and vanilla extract. Mix well, now add dry ingredients and mix till no dry patch remains( do not knead). This mixture will be sticky.
5) Place rough balls or somewhat round balls on baking sheet and bake till they turn slightly golden and soft on outside, roughly 10 mins.
6) Let them cool on baking sheet for 10 mins and then place them on cooling rack till fully cool.

Note:
1) If adding dark brown sugar the color of the cookies will be on the dark side and lighter if light brown sugar used.
2) Add milk slowly as required, if you feel reduce the quantity, but the dough should be sticky for cookies to be soft.
3) Do not over bake them as cookies tend to become stiff as they cool.
